I currently use a samsung S10plus but have bought a samsung S25ultra.Can i just switch the sim card over.

yes, it is the same nano sim card that will work on both S10 and the new S25U. You don't need another sim card, just move it over to the new phone and follow the steps to setup the phone and migrate data
