I feel like I'm losing my mind. Everywhere I look it tells me to purchase an eSIM in the app. This is not an option in my app. I've restarted, reinstalled, tried on the computer (it tells me to purchase an eSIM I have to DOWNLOAD THE APP). This is absolute nonsense and I'm without service for days now.

I understand what he meant. If they're doing a flash sale they should expect problems and staff their support team appropriately. This is abysmal service.
I submitted two separate tickets. Neither resulted in any sort of confirmation message or email but I got a ticket reference number so I'm assuming they went through. I've also DM'd twice. Still waiting.

He meant flash sale that attracts lots of new subs that many of them run into problems hence many tickets ware raised and created huge backlog. I am guessing you have no services for new number? CS agent will be able fixing it for you. Did you submit ticket?

Been there done that. Zero response.
I've been waiting for two days. I have a new phone I am entirely unable to use. This kind of activation would take minutes with any other provider.
