My plan is showing consistent data usage when I am not using my mobile or its data.

I would suggest you put your phone on Airplane mode before you go to bed. My spouse put it on airplane mode every night without any data issues.

I have my phone set to home wifi. For several days each month don’t use my mobile data. I’m not clear how there would be data usage at all for many days.

You apps will update in the background that will take up data usage or if you are sending MMS with pictures will also use data.

You meant you always see some data usage close to midnight?

PM does not update the data usage constantly.  In fact, it only update it twice a day. 

So, any entry you see is just a total usage between that timestamp and the timestamp of the previous entry.  The early morning usage  you see on the Usage log does not mean it was used in the morning but a total usage for the last 12 hours.

Also, for correct usage reading, always use Incognito mode to login My Account to avoid reading cached old info
