I just renewed for my next billing cycle today. However, if I choose a different plan and click "change on next renewal" does that mean that the price change will occur for my next month?

yes, always select change on next renewal.
If you choose immediate, you lose what’s on your current cycle and are not refunded for what’s remaining nor are there any prorations.
