Should we all encrypt our simm cards for extra security?

I'm not an expert but I think it depends. If you:

1) Use your phone number to get two-factor authorization code for PayPal/Online banking

2) You are a very important person, you don't want people mess around with your phone number.

Then you should set up SIM card lock to prevent people insert your sim to another phone.

If I remember correctly, sim card itself was encrypted. The communication between cell towers and cell phone is also encrypted. So the biggest vulnerability is your phone. 

I suggest:

1) Don't show new SMS notification on your lockscreen. (iPhone: Setting -> Notification -> Messages -> Lock Screen)

2) Must add a lock code on your cellphone

Otherwise it is meaningless to just lock your sim.

I believe iPhones have been encrypted for some time now.  Android is a perpetual work in progress due to the fragmentation and huge variation in hardware capability.  Peronally, I don't think there is significant gains in security with encrypting the storage.  It is all the apps asking for unnecessary permissions.  If access to the internet can be controlled, it would go a long way to securing one's privacy.

I do not think you can encrypt a sim card. You can lock your sim card and/or encrypt your phone.

If you're asking the latter, it really depends on how you use the phone and how sensitive your data is in relation to the possibility of your phone getting stolen or you wanting to sell it.
