Just to expand on this a little, most things will stay with you as you change your plan.  The ones that may disappear are usually associated with new signup promotions.

For example, Public Mobile may offer new customers a 2GB monthly bonus for plans above a certain $plan.  If people get the promotion data, but then drop their phone plan to a cheaper one, this violates the requirement and the bonus may disappear.
