Hi, a significant amount of data was used at 12:11 am, the phone was not being used at that time, no calls, no text, no streaming, no surfing. Can someone explain?

it is called WiFi Assist
Go to Settings > Cellular or Settings > Mobile Data. Then scroll down and tap the slider for Wi-Fi Assist.

Your data usage is updated in your usage history in two 12 hour blocks of time from the previous day from midnight to noon and noon to midnight. These appear in your usage history usually time stamped just after midnight eastern. They do not represent the time the data was used merely the data used in each of the 12 hour periods of time. If there are two usage reports then one will usually have more than the other because the one from midnight to noon will include the majority of the time you were asleep while the other will be most of the time you were awake and possibly away from home wifi.

no, the data you see at 12am not really mean you used data at that time. PM only update data usage twice a day, so, it is the total usage for the last 12 hours

Data reporting in your usage history is cumulative every 12 hours or so.
So, it's all the data that your phone used between 12:11pm (or whatever the previous time stamp is) and the time you went to bed.
ETA: You can check and restrict unwanted and/or background access to the internet in your phone's settings. Also be aware that most recent phones have a function that augments weak WiFi signal automatically. Might want to turn that off.

The PM system updates usages twice a day.
Every 12 hours.
Once at 12 noon and 12 midnight.
That's probably what your seeing.
