I keep trying to edit my payment card because my old credit card expired. I go through the steps to edit the payment details, but then i'm told that there is a problem processing and to try again later. I keep being told that. It's very frustrating....

@JudyMPayne - Get a payment voucher from recharge or here: https://www.publicmobile.ca/en/on/payment-voucher
The physical vouchers look something like this:
Load it up via *611 (1-855-4PUBLIC) with your 4 digit PIN
OR
Via My Account within the Payments section on both the app and website.

Very frustrating indeed, however there is no phone support. Do not bother to contact pm to update cc info, you will be more frustrated. They cannot do it for you. Use the App under Payments. Or purchase voucher from a local gas station in the mean time. This is an error on pm side which they need to rectify.
