I’m planning a trip to Europe from Oct 1 to October 18. I want to use my cell phone but am uncertain what to add to my current plan. Do I get an eSIM, ask for data, ask for data and minutes? I’m really confused so any help will be much appreciated.

You need to purchase a local SIM or eSIM.
You can also use WhatsApp if all parties use this app on wifi or local data.

PM has no roaming services in Europe (they only have it for US and Mexico)
so, your only choice would be use travel eSIM or local data sim for data. For voice calls, download VoIP app TextNow or Fongo and you can make and receive calls and text using the number assigned by the VoIP
(please understand you won't get 2FA sms sent to your current PM phone number while you are in Europe)
