I’m going to Iceland, Finland Sweden, Norway and Denmark. 
is there any way I can have texting and or voice calling, internet using an ESIM?

Do you mean an eSIM from another carrier who does give service there?  Wi-Fi isn't related to cellular phone service.  Wi-Fi is something that is sometimes provided by free by local businesses to allow customers to use the internet, but it's not available everwhere.   You would need to use a cell phone carreier's mobile data service for maps and directions (unless you have preloaded the maps to your device).

As mentioned before, Fongo only offers free calling and you have to pay for texting. 🙂

Public Mobile only works within Canada, the United States and Mexico. You can however look at getting an eSIM for those countries. You can find it here. https://www.airalo.com/

Before you leave, you can download an app like TextNow and get a local number to where you live. You can leave a message on your voicemail to contact you at the TextNow number. You'll be able to use your TextNow number on WiFi down there along with the data eSIM. Enjoy your vacation.
