Options to choose a card are greyed out and cannot input credit card number. Only the postal code is functional.

use Incognito/private/secret mode to login My Account first, then paste this link:
https://myaccount.publicmobile.ca/en/account/payment/manage-card
you will be brought to the page to update payment. You just need to enter Card number, Postal, Expiration and CVV

If the credit card greyed out, there may be an issue with the account. I'd suggest reaching out to a CS Agent and ask for assistance.

Try using browser with incognito mode
Also try with PM app. if you already using the app, uninstall and reinstall after a reboot
If you need to pay now and can't test around further, buy a voucher and load voucher using the browser/app/*611
