So I ended up asking ChatGPT why it wasn’t working. After trouble shooting a bit we figured out that because the Bell sim was still in the phone an “Turned On” in “Cellular Data” in settings the phone was defaulting to that sim and blocking the transfer of my number to the new one.
I took a screenshot and posted it to ChatGPT and gpt was able to tell me exactly what to do. Very handy!
After I turned the old one off, it told me to go to “Network Selection” turn off “Auto” then manually select Public Mobile, then turn “Auto” back on. Then shut my phone down for two minutes and turn it back on. It resets everything and makes the new eSIM the default sim.
Now everything’s working.
Thanks for the tips for those who responded.

Typically it's done within minutes.

What step were you at? Log out, uninstall the app and log back in and try again.
