How can I go about getting text or call records from.a specific number?

using the app, log in to your Public Mobile account, click on Usage Breakdown...scroll down to View Usage History to see your own usage only.

From the main web page, scroll up to the category Usage History. On the top left you can filter out by days 7, 30, 60 etc days calls or text.
