Was at the Apple Store doing some troubleshooting and it seems we deleted the my eSIM in error. Any ideas on how to recover?

You need to rebuy esim from the app

Just login the app on the phone, use email to receive 2FA . after login, goto Account page and Purchase sim card and choose esim

You can ask PM to reimburse the cost after

just to add more information. You usually will not be charged again for buying eSIM again if you already purchased previously.
