So I have / had Extra Data and a few "500 International" Minutes somewhere.

I can't see them now - It said on them "They will Never Expire"...

unless you've used 'em up, they should still be there. Log in to the app > Usage Breakdown to see them.

Minutes and bonus data received on holidays few years ago do NOT expire until you use them all.

Use clean browser, clear cookies, use computer, incognito mode and you have to see those bonuses on your account.
