yes, you can use data, call and text like you are in Canada

and you can call locally and US and Canada while you are in Mexico

I am going to be in Mexico for 6 weeks

If I change my subscription to include Mexico does this mean it covers my calls within Mexico, or does it only cover calls from Canada to Mexico?

You can use your data freely as well as text to any north American number. Make sure to enable Roaming Data in settings. Also, be aware that when you get home...you likely won't be able to downgrade plans as once you have a higher value plan, you won't see any available plans in your account that are much cheaper than the one you have when you get home.
