Just checking - if I subscribe to the new 5g US/Canada plan I will no longer need to buy US roaming, right?

Don't want to be stranded in US with no service

You are correct. Be sure to have your phone on roaming while down there.

@AnnieH Correct, and if your phone has been working for US roaming recently you should be fine. If not recently then is your phone VoLTE capable and enabled since the US has closed down pretty much all their 3G networks?
