The Oneplus 8 Pro should automatically switch from 3G-4G/LTE-5G if you have 5G coverage in your area. It should also indicate 5G on the phone.

No it's not selectable and I can't figure out why.

Have you installed any and all OS updates?
But it kind of doesn't matter. It's 5G speed, not really exactly 5G network. You can get the same speed when connected to the 4G LTE network like you have.
