I no longer have access to the email address I registered my account with. I need to change this in order to log in and change my payment information. I cannot seem to change the email without first signing in with the email address on file

You'll have to get a hold of a CS Agent if you can't log in.

Keep an eye for their reply in the top right corner that looks like an envelope.

The email address is just a login id. It could be fake for all it cares. You won't be able to get some emails from here but still.

Just login with it. Then go to profile and manage eversafe and change to a working email address.
