Ok next silly question - if I don't have data do I need to be in wifi to make / receive calls and texts if I have unlimited talk and text data plan?

Voice and SMS text does not need data. so, as long as you are connected to PM network, you are good

But please note the new type of messgae, iMessage or RCS do need Wifi or Mobile data, but they are not true SMS

You don’t need data to make outgoing and incoming talk and text.

Data is require for surfacing the website.
