why does 1 of my phones show full phone numbers in history, and my other phone just shows the same 6 digit number for all texts and calls

For the full phone numbers, it's not uncommon that they display with the 1 + area code beforehand.

As far as the '6 digit number' ... could you be referring to a short code such as would be displayed when using iMessage? This would show up in your self-serve usage history anytime an iMessage is utilized.
