Soooo I woke up this morning and my icons have changed and when you click on an app folder, it goes into full screen mode to show you all the apps in the folder.

Anyone know I can revert back? Any icon pack suggestions?!

You need to download and re-install the old OnePlus Launcher apk file...sorry I don't have the link think someone may of posted it on OP forums...luckily I was not affected have been using Nova launcher for years now.
