I will be travelling to Quebec, New Brunswick, Nova Scotia and PEI. Can I use my voice, text messaging and data to call anywhere in Canada?

You can call anywhere from Canada to any other Canadian number as long as you have Canada Wide calling in your plan (there has been a very brief period they offered only Provincial wide calling, make sure you don't have that)

Mobile data are always able to use everywhere in Canada

Yes, you can use these service anywhere that Public Mobile has services available.

HI @anrol_esguerra Login to your My Account, if you see "Unlimited Canada-wide Talk" or "100 Minutes Canada-Wide Talk", then yes, you can make calls to other provinces when you are in Quebec, New Brunswick, Nova Scotia and PEI

and Yes, your Data will work , too

This is true about a Canada-wide calling plan. I interpreted the OP as asking if calls can be made in other provinces, but not necesssarily thinking about the destination of the call. in the case of a province-wide calling plan, the service would also still be usable, but outgong phone calls would only be doable to phone numbers in the same province as the OP was in at that moment.

Unless.....if Op had old Province -wide calling plan and also had the $5 / 500minutes of Canada wide calling Add-on.
