Hi I'm going to Los Angeles tomorrow and I just purchased a US Roaming Addon for 10 days unlimited talk and 250MB of data.

So the roaming should start right now?

What US carrier will I be on?

How can I contact Public Mobile while in the US if something goes wrong (e.g. roaming not working)?

AT&T and T-Mobile

I think you can still only contact PM with private message. There's an automated phone number

1-855-4PUBLIC, But it's more for topping up only.
